Green curry prawns skewers

Ingredients

4 serves
at least 16 prawns
500 ml fresh whole milk
2 tbsp of green curry paste
1 lime
4 tbsp fresh chopped coriander
75 gr. of sesame seeds
mix of black, white and pink pepper
kosher salt
wood skewers

 

Instructions

  • Stir the green curry paste with milk, coriander, lime zest, a little pepper and salt.
  • Clean the prawns and put them in the mixture to marinate (2 hours, at least!). Let them rest, covered, in the fridge.
  • Meanwhile you’ll prepare sesame. Put the seeds in a skillet, over medium heat, until they turn brown, then remove them from the pan and cool down.
  • When the marinade is done, preheat oven to 180°, thread the prawns onto the skewers and bake for 5 minutes.
  • Remove from oven and put the prawns on the sesame seeds, gently, both sides. put few drops of lime juice and serve immediately!
Suggested pairing is a dry, german Riesling.
