at least 16 prawns
500 ml fresh whole milk
2 tbsp of green curry paste
4 tbsp fresh chopped coriander
75 gr. of sesame seeds
mix of black, white and pink pepper
Stir the green curry paste with milk, coriander, lime zest, a little ‘pepper and salt.
Clean the prawns and put them in the mixture to marinate (2 hours, at least!). Let them rest, covered, in the fridge.
Meanwhile you’ll prepare sesame. Put the seeds in a skillet, over medium heat, until they turn brown, then remove them from the pan and cool down.
When the marinade is done, preheat oven to 180°, thread the prawns onto the skewers and bake for 5 minutes.
Remove from oven and put the prawns on the sesame seeds, gently, both sides. put few drops of lime juice and serve immediately!
Suggested pairing is a dry, german Riesling.
