Chicken salad with feta cheese and crunchy poppadom

4 serves
100 gr cold chicken breast (roasted or boiled)
100 gr chopped lettuce
100 gr feta cheese
poppadom 2 pieces
2 tbsp fresh coriander


1 tsp mayo
1 tbsp dijon mustard
1 tbsp balsamic vinegar
2 tbsp e.v. olive oil
1 lime juice
2 tsp lime zest
2 tsp chopped chive
ground black pepper
kosher salt


  • Unravel the cold chicken. Wash, dry and chop the lettuce. Break the feta cheese into small pieces with your hands. Put everything in a bowl with 1 tbsp of fresh coriander.
  • Fry the poppadom in sunflower oil and cool down on a paper towel.
  • Prepare the Vinaigrette putting all the ingredients in a jar with screw metal lid. Now shake it. Add the vinaigrette in the bowl and mix everything gently with your hands.
  • Serve the salad on a plate adding on top the remaining coriander and the broke fried poppadom.
Suggested pairing is a fresh blonde ale beer.
